Crown Roast

A traditional
roast famous for the 'entrance' it can make to dinner parties. Made
from two, three or even four tender racks of Lamb with all the excess
fat removed, the number of cutlets can vary from 12-32. Servings can
therefore vary from four to twelve persons.
We can also provide a variety of stuffing's for your crown, which apart from adding to and complementing the delicious grass fed Lamb, can also increase the number of servings by approximately one for each 6ozs/150g. of filling. We do recommend however that these fillings are wrapped in foil cooked separately from the crown and placed inside one or two minutes before presenting to family or guests. This is to prevent overcooking the cutlets of the crown while attempting to fully cook the stuffing, it also allows the inside to crisp to a delicious golden brown. Another idea is to lightly cook a variety of fresh vegetables, leeks are excellent in season, and place them into the crown prior to serving. |
