| Roast Lamb with Sun Dried Tomatoes | |

4 - 6 Medium: Allow 25mins per 454g (1lb) plus 25 mins Well done: Allow 30mins per 454g (1lb) plus 30 mins Gas mark 4-5, 180°C, 350°F 1.25kg (2-3lbs) leg of lamb joint 4 x 15ml sp (4 tbsp) passata or creamed tomatoes 3 cloves of garlic, crushed Salt and black pepper 75g (3oz) sun-dried tomatoes, chopped into small pieces Fresh basil, for garnish |
| Weigh the joint and calculate the cooking time as shown above. Place the joint on a rack in a roasting tin and open-roast in a pre-heated. In a small bowl, mix together Passata or creamed tomatoes, garlic, seasoning and sun dried tomatoes. Spread this mixture over the lamb 20 - 20 minutes before the end of cooking time. Return to the oven for the remainder of the cooking time. Allow the joint to stand for ten minutes before carving. Some of the mixture may fall off during carving. Simply serve with the slices. Serve with broccoli and new potatoes, baked leeks and onions. | |
| Lamb Kebabs in a Tomato and Herb Marinade | |

2 15 - 20 minutes plus marinating time 454g (1lb) of lean lamb, cubed (neck fillet, double loin or leg steaks) 3 x 15ml sp (3 tbsp) tomato ketchup 2 x 15ml sp (2 tbsp) red wine vinegar 1 x 15ml sp (1 tbsp) olive oil 1 x 15ml sp (1 tbsp) fresh basil, chopped 1 x 15ml sp (1 tbsp) fresh thyme, chopped Salt and black pepper |
| In a large bowl, mix together the marinade ingredients and season. Add the meat, stirring to ensure it is evenly coated. Cover and leave to marinate in a refrigerator to 3 - 4 hours or overnight. Thread the meat on to skewers. Cook under a pre-heated grill or on a barbeque for 15 - 20 minutes, turning occasionally. Serve with grilled vegetables and a rice salad. | |

| Grill one side of the steaks or chops. Meanwhile, mix together topping ingredients. Turn over steaks or chops. Press chosen topping ingredients on the meats and cook for at least 3 - 4 minutes of the cooking time until golden. Serve with potatoes, rice or noodles and a mix salad. | |
