Another twist on the traditional turkey is to buy a boneless turkey breast roast, a little dearer but alot easier to carve (often called a turkey butterfly)

parsnips and carrots with rosemary and melted butter

mashed potatoes blended with buttermilk

Safe advice on stuffing: One piece of bread yields 1/2 cup (125 ml) of crumbs. Allow 1/2 cup of stuffing per pound (500 g.) of turkey. Spoon stuffing lightly into turkey, instead of packing. Stuffing will expand in the turkey while cooking.

Here is an easy way to remove stuffing from the turkey. Just before stuffing the turkey, insert a generous amount of cheesecloth into the cavity leaving excess cloth at the opening. Stuff the bird as usual and roast. After roasting, simply pull the cheesecloth out of the turkey in one quick action -- no waste, no mess.

use sourdough bread and combine with spinach and onions
add raisins prunes and apricots to whole wheat bread
try cornbread with smoked sausage
add pears to raisin bread stuffing
for high-fiber stuffing use seven grain bread

make the stuffing in a casserole with lots of vegetables and very little fat
make delicious turkey gravy by skimming away all the fat from the drippings before making gravy.
